Freshness. For this beer, we get our spices from local markets each week. All the ginger, lemongrass, and galangal are cut minutes before use in the beer to give them most optimal fresh taste.
Why fresh? If we were to use dried ginger, it would taste more like ginger snap cookies and have extra spice heat. If we used extract, it would taste more like ginger ale. There is no substitute for freshness.
Because of this freshness we encourage you to drink Thai Wheat as fresh as possible and serve with fresh foods. That's why we recommend fish and grilled vegetables.
